2 slices of bread

Preheat your grill
Spread one side of each bread slice with Connacht Gold Half Fat butter
Place three slices of mozzarella cheese on one slice and top with the tomato slices.
Drizzle with the balsamic vinegar and season with salt and pepper.
Top with the basil, then top it with the other bread slice.
Place the sandwich under the grill until one side is toasted then, using a spatula,
carefully turn it over and toast the other side.
When the cheese has melted, turn off the grill and transfer the sandwich to a cutting board and cut in half.
