A Healthy Spin on Pancakes

Ingredients:

  • 170g oats, blended into a fine powder using a food processor or blender
  • 2 large eggs & 2 egg yolks
  • one 500ml bottle Connacht Gold Protein Milk
  • 1/4tsp cinnamon (optional)

Method:

  1. Add the oats to a food processor and blitz until you have a fine powder
  2. Add the eggs to the oats and combine
  3. Add the milk in gradually until its a light bubbly mixture
  4. Let mixture set in fridge for at least 30 minutes
  5. Just before your about to cook them give the batter a good mix
  6. Top with anything you want.. we love sliced banana, peanut butter, a sprinkle of homemade granola and a drizzle of honey.
