3 large potatoes
100g of baby button mushrooms
1 large red onion
1 medium sized red chilli.
Salt and black pepper
Connacht Gold Half Fat butter
Wash, dry and halve length-ways 3 good size potatoes.
Preheat your oven to 220 degrees celsius.
Bake the potatoes on a rack for 50 – 60 minutes.
Nearing the end of the bake, chop the mushrooms, red onion and chilli (remove the seeds first) and fry in a hot pan with olive oil until the onions are soft and set aside.
When the potatoes are baked, take them out of the oven, switch it off and turn on the grill.
Spoon off the mix of mushrooms, red onion and chilli onto the top of the potatoes and grate some cheese over them and place them under the hot grill for 3 minutes.
Serve them with a sprinkle of parsley, salt and black pepper and a loving dollop of Connacht Gold Half Fat butter.
