I love to make a variety of homemade snacks and I try to keep them healthy and nutritious but most importantly tasty!! Key to the success of this recipe is the use of top quality and authentic Connacht Gold butter, that’s what gives them the real kick they need. These Cranberry & Oat Slices are so versatile – munching mid morning to keep you going until lunchtime, a high energy snack before sports, a perfect filler for lunchboxes, a pre dinner after school treat for the kids or a healthy dessert – there is just enough sweetness to satisfy any sugar cravings! They are full of wholesome goodness and easy to whip up in a few minutes so I’d highly recommend you to give them a go.
This recipe is also super adaptable and you can add your own extras like cinnamon, nutmeg, maybe a dash of salt, vanilla, coconut, raisins or even chocolate chips but these are optional and so I just add what I like depending on my mood!

500g Connacht Gold Creamery butter
300g coconut, lightly toasted
150g flaked almonds
175g demerara sugar
250g plain flour
1 cup chopped figs
1 cup mixed cherries
1 cup dried cranberries
160ml golden syrup
4 eggs, beaten
Preheat oven to 180 degrees celsius. Line a swiss roll baking tin.
Mix all the dry ingredients together including the figs, cherries and cranberries in a bowl.
Melt the butter and syrup and add to the dry ingredients. Then add the beaten eggs.
Turn the mixture into the tin and press evenly into the corners.
Bake for 30 mins until firm and lightly coloured.
Cool down, remove carefully from the tin and sieve icing sugar over it. Cut into squares and store in an airtight container in the fridge.
Sit back, relax, put your feet up and enjoy the fruits of your labour!
