Joe’s Christmas Festive Scones


  • 1 tsp vanilla extract/essence
  • Rind of ½ orange
  • Juice of ½ orange
  • 100g sultanas
  • 20g glace cherries
  • 2tsp brandy
  • 350g Plain Flour
  • Pinch of salt
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • 85g Connacht Gold Pure Irish butter
  • 3tbls caster sugar
  • 1 egg
  • 120ml Connacht Gold Fresh milk
  • 1 egg/splash of milk



  1. Place the Vanilla, orange rind, orange juice, sultanas, cherries and brandy into a bowl, microwave for 60 seconds, remove, stir and leave to one side.
  2. Sieve together three times the flour, salt, cinnamon and baking powder and then transfer into a food processor.
  3. Take the Connacht Gold butter straight from the fridge, cut into cubes and add to the flour, add the sugar and blitz until it forms into a crumb.
  4. Add the egg and ¾ of the milk and blitz, add remaining milk as needed, you do not want your mix too wet.
  5. Now transfer the mix into the bowl with the fruit and mix well until all the fruit is incorporated into the mix.
  6. Turn onto a floured surface, kneed, then roll or pat out into a round approximately 4cm deep.
  7. Using a 5cm round scone cutter, cut into scones until all the dough is used up, place onto a parchment lined, greased baking tray.
  8. Whip up 1 egg with a splash of milk and brush the top of the scones
  9. Bake in a pre-heated over at 170oc for 20 minutes, serve warm with some lovely Connacht Gold Half Fat butter spread over them with a nice cup of tea – enjoy!
