Joes fillet of lemon sole with Connacht Gold Sea Salted butter & dill, prawns and crispy croutons

Ingredients

3 fillets of lemon sole, trimmed

1tsp of fresh chopped dill

2 oz. of baby prawns

2 knobs of Connacht Gold Butter with Sea Salt

10floz of white wine

Sea Salt/Black Pepper

½ Lemon

6-8 crispy bread croutons

Roquet leaves to garnish

 

Method 

Step 1:

Gather all your ingredients and utensils

Step 2:

Pass sole fillets through seasoned flour, heat pan, add a generous knob of Connacht Gold butter with Sea Salt, add the fillets of sole and pan fry on either side for 1 minute, remembering to season each side with sea salt, pepper and lemon, remove from the pan and leave to one side

Step:3

Add a knob of Connacht Gold butter with Sea Salt, back into the pan, splash of white wine, some chopped fresh dill and prawns.

Step 4:

Assemble fish onto plate, coat with the prawn butter from pan

Step5

Add some crispy croutons, garnish with dressed roquet leaves and enjoy
