Joe’s Lovely Lemon Bars


  • 175g Plain Flour
  • 50g corn flour
  • 80g caster sugar
  • 150g diced Connacht Gold Creamery Butter (best used straight from the fridge)
  • 1 tbsp. Connacht Gold milk

For the Filling

  • Zest and juice 4 medium lemons
  • 3 eggs
  • 200g caster sugar
  • 25g plain flour
  • Icing sugar for dusting


  1. Pre-Heat your oven to 200C /180C Fan/ Gas Mark 6
  2. Sieve the flour, caster sugar and corn flour into a food processor and blitz
  3. Add the Connacht Gold butter and continue blitzing until the mix resembles breadcrumbs
  4. Add the milk, the mix will form into a dough (add more milk if needed)
  5. Grease and line an oven proof dish 22cm square with baking parchment
  6. Place the pastry mixture into the base of the dish and using your fingers, spread out evenly over the base
  7. Bake for 15-20 minutes until golden brown
  8. Remove from the oven, lower the oven to 180C /160C Fan/ Gas Mark 4


  1. Mix together the lemon zest, lemon juice, eggs, sugar and flour
  2. Pour over the base in the baking dish
  3. Place back in the oven until the topping is set. Approximately 15-20 minutes
  4. Remove from the oven, leave for a couple of hours to fully cool and set.
  5. Cut into required portion size, dust with icing sugar and enjoy!!
