Joe’s Munchie Stuffed Chocolate Chip Cookie


  • 175 g Connacht Gold butter (softened)
  • 175 g light brown sugar
  • 1 tsp. vanilla extract or essence
  • 3 eggs
  • 350g plain flour
  • pinch salt
  • 1 tsp. baking powder
  • 110g mixed chocolate chips
  • 12 Munchie sweets



  1. Cream together the Connacht Gold butter, brown sugar and vanilla for 4-5 minutes in a large mixing bowl until light and fluffy.
  2. Beat together the eggs in a bowl and add to butter mixture in small amounts, beating well each time.
  3. Sieve the flour with the baking powder and salt.
  4. Add the sifted flour mixture to the butter and egg mixture and beat slowly until the mixture comes together.
  5. Add in the chocolate chips and beat until combined.
  6. Place the mixture onto a floured surface and mix into a smooth ball.
  7. Cover with cling film and leave in the fridge for at least 30 minutes.
  8. Grease a 12-portion bun tin with Connacht Gold butter.
  9. Take out cookie mixture, roll out on a floured surface ¾ of the mixture, cut into rounds large enough to line the bun holes.
  10. Place a Munchie sweet into each cookie lined bun.
  11. Roll out remaining cookie dough and cut into 12 circles, large enough to cover the buns.
  12. Place rounds on top of lined buns and seal together.
  13. Place into the fridge for 15 minutes to firm up.
  14. Cook for 12-15 minutes in a pre-heated oven of 200C /180C (fan) /Gas Mark 4
  15. Let cool slightly (until set enough to remove) before removing. Serve warm with ice cream.
