Lemon Bar Biscuits

For my suggestion, I have chosen a delicious little teatime treat. At home, we like to treat ourselves to some lovely tasty treats on regular occasions and at this stage I have built up a wonderful collection of recipes, which are all used over and over again.

I would urge everybody to try my tasty recipe for Lemon Bar Biscuits to brighten up any day. I can assure that these little bites are a taste sensation and a treat not to be missed. They are always a firm favourite in our house and never fail to delight. At this stage, I’m doing them every week to keep everybody happy – even just the smell of the magnificent little baked treats wafting around the kitchen will have the whole household salivating. The only problem is – will there be enough to go around when they all call for more?!

Ingredients:

4oz Connacht Gold  Creamery Butter
6 oz flour
4 oz sugar
4 eggs
Zest of 1 large lemon
1 large tablespoon lemon juice
Candied ginger for topping

Method:

  1. In a food processor blend together the Connacht Gold butter (make sure it is cold and chopped up into small squares), 4 oz of the flour and 1 oz of the sugar. Press onto the bottom of a greased, lined baking tray and bake for 20 mins.
  2. For the lemon topping whisk 3 oz sugar, 2 oz flour, the eggs, the lemon zest and the lemon juice. Let it sit for 10 mins then whisk again and pour over the shortbread base.
  3. Sprinkle with candied ginger and bake again for 20 mins until slightly browned – sit back, relax and then indulge in the fruits of your labour!
