Sultana Soda Bread with Bacon


  • 1 lb 8oz. (650g) plain white flour
  • 1 level tsp. salt
  • 1 level tsp. bread soda
  • 12 fl oz. (350ml) Connacht Gold buttermilk
  • 4 oz. of cooked smoked Irish bacon, diced
  • 2 oz. sultanas


  1. Sieve together three times the flour, salt and bread soda into a bowl
  2. Add in the sultanas, bacon and mix together
  3. Add buttermilk and mix into dough
  4. Knead on a floured surface until smooth and free from cracks
  5. Place on a greased baking tray; make an incision of a cross
  6. Cook in a pre-heated oven 220°C/450F or gas mark 8 for 20 minutes and reduce heat to 200°C/400F or gas mark 6 for a further 20 to 30 minutes.
  7. You know it’s ready when you tap the base of the bread and you get a hollow sound.
  8. Place on a wire rack to cool.
  9. Cut a good slice and spread with the Connacht Gold low fat butter
