Summer peach fool

Brought to you by Connacht Gold and our dairy products – milk, cream and pure Irish butter.


  • Firstly make the custard using by boiling 300ml of milk with 1 teasp of vanilla bean paste,
  • allow to cool.
  • Add 2 egg yolks to a bowl, 1/2 tblsp of cornflour, 1 tblsp caster sugar.
  • Whisk and add cooled milk , put back in heat and whisk until thickened.


  • Half 5 peaches, layer a casserole dish with amaretti biscuits.
  • Add peaches, 5 tablespoons brown sugar,
  • 80g butter cut into cubes,
  • 1 tablespoon of vanilla essence and put over 2 tablespoons of orange juice.
  • Place in preheated oven for 20 minutes at 190C.
  • Remove from oven and serve with all components .
  • Add custard to cream and decorate with crushed amaretti biscuits and pistachios.
  • Enjoy
