Buttermilk Pancakes & Caramelised Banana
the BEST Buttermilk Pancakes you’ll ever try – promise! This easy to follow pancake recipe yields super delicious and totally amazing pancakes every time!
- 1 mug of plain flour
- 1 mug of Connacht Gold buttermilk
- 1 pinch of caster sugar
- 1 pinch of salt
For the banana
- 1 small banana cut In half and halved long ways
- Caster sugar for sprinkling
- 1 tbsp of Connacht Gold butter
- Blueberries & raspberries
Start firstly by making the pancake batter. In a large bowl whisk all the batter ingredients together until you get no lumps. Leave to rest for 30mins.
Heat a large frying pan on a medium heat and add a teaspoon of butter. Add on a ladle full of the pancake mixture and cook on both sides. Repeat three times and stack them up.
With the Banana sprinkle the flat edge with the caster sugar until coated and caramelise on a medium heat. Finish with the butter and serve on top of your pancakes with the honey, berries and yoghurt. Enjoy.
