After School Mac and Cheese with Crispy Bacon

Quick, easy and I promise they will come back for more!

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Serves: 4-5

Ingredients:

  • 200g macaroni pasta
  • 100g pancetta cubes or rashers (optional)
  • 25g Connacht Gold Pure Irish Butter
  • 25g flour
  • 200ml Connacht Gold Fresh Milk
  • 150ml Connacht Gold Fresh Cream
  • 1 tsp Dijon mustard
  • ¼ tsp nutmeg
  • 70g white cheddar, grated
  • Salt and pepper
  • Handful of fresh parsley to garnish.

Method:

  • Cook the pasta as per packet instructions.
  • If using the pancetta or bacon, fry until golden and set aside. 
  • Make a roux by melting the butter in a saucepan on medium heat.
  • Add in the flour and combine; cook for 1 minute.
  • Add the milk and cream to a jug and gradually whisk it into the saucepan with the roux.
  • Simmer and allow the sauce to thicken. Then, add the mustard and nutmeg.
  • Add the cheese and allow it to melt into the sauce.
  • Season to taste with salt and pepper. 
  • Stain and rinse the cooked pasta.
  • Add the pasta to the cheese sauce.
  • Add the cooked pancetta or bacon.
  • Season with salt and pepper and garnish with parsley.
