Mixed Fruit Buns

A fun bake that’s great as a treat after school!

  • Prep Time: 5 minutes
    Cook Time: 18 minutes
    Makes 12​

Ingredients:

  • 100g Connacht Gold Pure Irish Butter
  • 100g Light Brown sugar
  • 2 eggs
  • 120g natural yogurt
  • 1 tsp vanilla extract
  • 250g plain flour
  • 1tsp baking powder
  • 2 tbsp oats
  • Mixed fruits, strawberries chopped finely, whole raspberries, peach chopped finely, chocolate chips.

Method:

  • Preheat oven to 180C, 160C fan, gas 6
  • Line a 12 hole bun tin with cases. 
  • Beat the sugar and butter together until pale and fluffy.
  • Add one egg at a time while mixing.
  • Add the yogurt, vanilla extract and combine.
  • Finally, sieve the flour and baking powder.
  • Add the oats and combine everything well. 
  • Spoon the mixture into the bin cases and add the fruit on top of some and chocolate chips on others. 
  • Bake for 18 minutes until golden.
