Chocolate Ganache Valentine Brownies

Ingredients:
- 175g Connacht Gold Pure Irish butter at room temp
- 175g 70% dark chocolate
- 25g cocoa powder
- 3 eggs
- 225 light brown sugar
- 1 tsp vanilla essence
- 100g self raising flour
- 70g milk chocolate drops
For the ganache:
- 250ml Connacht Gold fresh cream
- 150g milk chocolate
- 100g dark chocolate
Method:
- Pour the mixture into a pre-lined tin 9×10 inch
- Preheat oven to 200C, 180C fan, gas 6
- Melt the butter, chocolate, and cocoa powder in a large bowl, allow to cool slightly.
- Place the egg and sugar into a large bowl and whisk until light and fluffy with an electric or handheld whisk.
- Add the vanilla essence while mixing.
- Sift in the flour to the egg and sugar mixture in two parts, and fold it gently with a wooden or metal spoon.
- Fold in the chocolate drops.
- Pour the mixture into the pre-lined tin and bake for 19 minutes.
- The mixture will be wobbly when removed from the oven, this is ok, it will set as it cools.
- Pour the cream into a saucepan and add the chocolates to make the ganache.
- Simmer on a medium heat, stirring until the chocolate is melted.
- Pour the ganache over the cooked brownie mixture and decorate if you wish with flaked chocolate or chocolate decorations.
