Scrambled eggs

A simple one but a recipe I am asked for time and time again – The ultimate scrambles eggs!! One for all the family


  • 4 eggs

  • 1 tablespoon of Connacht Gold butter

  • 2-3 tablespoons of Connacht Gold milk

  • 1tbsp of mascarpone cheese

  • Chopped parsley or chives 

  • Toasted sourdough bread 

  • Salt and pepper 


In a large bowl whisk the eggs and milk until well combined. Add to a pan on a medium heat  with the butter and stir constantly with a spatula. Remove from the heat to stir and back on the heat until you get a nice creamy scrambled egg texture.

Season with salt and pepper and then fold through the mascarpone cheese gently. Serve on top of the sourdough with a sprinkling of fresh herbs. It’s simple cooking but very effective and tasty.
