Shepherds Pie
The ultimate Irish comfort food for a winter’s day! A simple one to put together that is done in no time at all!
Ingredients

teaspoon olive oil
-
1kg minced lamb/beef
-
Two sprigs if fresh thyme chopped
-
Sea salt and freshly ground pepper
-
1 medium onion, diced
-
4 medium carrots, peeled and chopped
-
3 tablespoons tomato purée
-
1 tablespoon Worcestershire sauce
-
300mls chicken stock
-
A handful of frozen peas
For the mash
- 1kg rooster potatoes, peeled and cut into 1 1/2-inch pieces
- salt and freshly ground pepper
150ml Connacht Gold milk, warmed - 4 tablespoons Connacht Gold butter
- Grated white cheddar
Method
In a large pan start by sweating down the onion, garlic, carrot and thyme in the oil.
Once softened remove and set aside in a bowl. In the same pan add the mince and cook down until nicely golden and all the liquid has evaporated.
Add back the carrot mixture and then add the tomato purée cooking it out on a medium heat.
Add the Worcester sauce, stock and season with salt and pepper. Bring to the boil and simmer for 15-20mins until nicely thickened. Once cooked add the frozen peas and then transfer to a casserole dish.
Cook the potatoes in some water until soft and mash them up. Add the milk and butter to a pan and heat through. Poor small amounts of the milk and butter mixture into the mash until you get a beautiful creamy mixture. Season and top it on top of the mince in the casserole dish.
Finish with some grated cheddar and then bake at 180oC for 20mins. Serve and enjoy.
