Lemon Buns & Vanilla Buttercream

Ingredients:
For the buns:
- 3 eggs beaten
- 170g Connacht Gold Pure Irish Butter at room temp
- 170g Caster Sugar
- 170g Self Raising Flour
- 1tsp Baking Powder
- 2 tbsp Connacht Gold milk
- For the inside – 100g lemon curd, chocolate spread or jam
For the buttercream:
- 100g Connacht Gold Pure Irish Butter at room temp
- 200g Icing powder
- 2-3tbsp Connacht Gold Fresh Cream
Method:

Preheat oven to 180C, 160C fan, Gas 5

Line a bun tin with bin cases.Combine all ingredients and whip to a smooth mixture with a handheld or electric whisk.

Spoon 1 tbsp of mixture into each bun case.

Bake for 14-17 minutes (ovens and bun cases can vary so keep an eye)

Cool completely on a wire rack while you make the buttercream.

If filling the buns, cut a small hold out using a knife or apple corer and fill with the filling of choice.

To make the buttercream

Whip the butter with a handheld or electric mixer for 2 1-2 minutes

On medium speed, add the icing powder one spoon at a time.

Add the cream, turn to high speed and beat for 10 minutes, scrape the sides halfway through. Knock the air out by mixing with a spoon.

Place into a piping bag with large star nozzle and have fun decorating!
