Lemon Cheesecake
Bright, zesty, and refreshingly creamy!

Ingredients:
For the base:
- 280g biscuits (I used a mix of digestives and Hobnobs)
- 90g Connacht Gold Pure Butter, melted
For the filling:
- 495g (3 packs) cream cheese (e.g., Philadelphia)
- 150g icing sugar, sifted
- Juice of 1 lemon
- Zest of 3 lemons
- 200ml Connacht Gold Fresh cream
To decorate (optional):
- 150ml Connacht Gold Fresh cream, whipped
- Lemon slices
Method:

Line the base of a 9-inch (23cm) springform cake tin with baking parchment.

Mix the biscuit crumbs with the melted butter and press into the base of the tin using the back of a spoon.

Chill in the fridge while you make the filling.

In a large bowl, beat the cream cheese until smooth.

Add the icing sugar, lemon juice, and lemon zest. Beat until fully combined and creamy.

In a separate bowl, whip the cream to stiff peaks.

Gently fold the whipped cream into the cream cheese mixture with a spatula, keeping the mixture light.

Spoon the filling into the tin, smoothing the top with the back of a spoon.

Refrigerate for at least 6 hours, preferably overnight, until fully set.

Before serving, decorate with whipped cream and lemon slices if desired.
